Walnut / tomato buns

 

 Ingredients

8 oz unbleached white bread flour

8 oz wholemeal white bread flour

7 g sachet yeast

1 tsp. salt

1 tsp. sugar

9 g lard

300 ml hot water

 

Flavouring

Chopped sun-dried tomatoes

Chopped walnuts

 

 

Method

1]  Sift flour and add, yeast and salt.  Make well in the flour mixture.  Pour in the warm water.  Mix well to form a dough.

2]  Turn dough onto lightly floured surface and knead for 10 mins until elastic and springy.

3]  Place in an oiled bowl.  Cover with cling film and leave in a warm place for about 60 mins, until it has doubled in size.

4]  Knead again for a few minutes.  Divide dough into two portions.  Add the tomatoes to one.  Add walnuts to the other.

5]  Divide each into 8 balls and place on an oiled tray.  Cover with a tea-towel and leave to rise for at least 60 min.

6]  Pre-heat the oven to 210°C / 400°F / gas 7.  Add bowl of water in the bottom of the oven.

7]  Bake in centre of oven for about 20 mins, until golden.
